Cilantro Lime Cauliflower 'Rice'
- 1 head of cauliflower
- 1 lime, juiced
- ½c cilantro, chopped
- 2Tbs olive oil
- 2 cloves garlic, chopped
- Salt to taste
- Cut stems off cauliflower and place florets in food processor and pulse until it resembles rice.
- Heat oil and garlic in large skillet. Add cauliflower and cook for 5-8 minutes.
- Remove from heat and stir in cilantro and lime.
- Great when served with black beans, avocado and tomates.
