This recipe was shared by Chanda and sounds amazing. Although she appears to cook like me (no measurements) you get the idea and play with the measurements to best suit you and your family:
- Cooked brown rice (or quinoa, bulgur, farro...)
- Black beans
- Sautéed onions
- Lime juice & zest
- Green enchilada sauce
- Shredded pepper jack cheese
- Stirred it altogether and topped with fresh avocado.
